I must be strange because while other parents are complaining about “no school” days, I am always excited for them. I am excited for a break from the normal routine, I am excited for a chance to spend extra time with Carter, and I am always excited for lazy mornings and homemade breakfast. On this cold February day off, we decided to make some yummy banana pancakes.
The kids and I spend a lot of time together in the kitchens so now its pretty easy for me. I do all of the measuring and the kids take care of the rest. I have always had the philosophy that even if, in the beginning, its a little more effort on my part, I never want to turn the kids away from helping and its paid off because now they love to help.
This recipe is super simple so its great for the kids. First, mix together the few dry ingredients needed and the add the liquids. I think that might actually be backward from normal baking standards, but I don’t care, its what works for this recipe.
After adding all of the liquid ingredients, add the bananas. I used frozen bananas, that why they are so ugly, but I often just add whatever is sitting on my counter. I don’t even mash them up before I add them to the batter because we like the chunkier pieces of bananas in the pancakes. If you don’t like the chunks, just mash them up a little before you add them to the batter. Also, I used almond milk, its better for Roe-Roe and his asthma but you can use whatever type of milk you have on hand. Plus, they are so much fluffier with cows milk instead of almond milk, but we do what we gotta do to keep this boy healthy.
I spent years throwing away burnt pancakes that were still goopy in the middle. I was the worst pancake maker of all time, and then I got this electric pancake griddle and everything change. I am the pancake queen now. So, I suggest if you struggle like me, that you get yourself an electric griddle. I also like to make mini pancakes, they are just easier to handle so I use a dough baller to evenly pour the batter onto the griddle. One more thing, if the batter is a little too thick for you, just add a dash more milk.
The kiddos love Nutella, so on special days, we have it on our pancakes. Other days, we use real maple syrup because we are Canadians now.But seriously, have you ever looked at the ingredients on Mrs. Butterworths? There isn’t even any actual maple syrup in it…yuck! Anyway, I hope you love these lazy morning banana pancakes as much as we do.
Yummy Banana Pancake Batter
Makes about 24 mini pancakes
1 cup unbleached flour
1/2 whole wheat flour
3 teaspoons baking powder
1 teaspoon salt
1 tablespoon sugar
1 egg
1 teaspoon vanilla
1 and 1/4 cups almond milk (or whatever milk you have)
3 tablespoons butter, melted
2 ripe Bananas
Instructions:
Mix together all dry ingredients.
Add all liquid ingredients and blend well with a stand mixer or hand mixer.
Add un-mashed bananas (or mashed if you prefer no banana chunks) to the mixture and lightly beat them in until they are evenly dispersed throughout the batter.
Use dough baller to pour batter onto medium heat griddle.
When you see a lot of bubbles, flip and let cook for another minute.
Serve hot and enjoy.
